I believe the way the graveyard script works is it bans the account to make sure nobody can log in and change anything, then copies all the contents into the graveyard server. The original account is then deleted, and only the graveyard copy is available. I'm guessing those accounts will be deleted in 5 or so days.

This is exactly how it works.
Once the copy on the Graveyard is created, the banned account in the active universe is set to delete.
The deletion process is the same for any player's account and takes 7-8 days depending on when the deletion was set.

The real answer is "it depends".
Gameforge uses a rather complex formula to determine where a player would land when it comes to points/ranks.
However, the guiding principle is "There will always be a server to which a player can merge".
Naturally, they will not be allowed to pick a new server.
However, if a server is well established and the other rules do not apply, then it is possible they could have their pick of servers.
Ultimately, it is up to Gameforge since they handle all the merges and I cannot say with certainty how it will be handled.
